The Best Blueberry Pie

You can bake this easy, delicious pie at home if you have fresh blueberries and a Grand Central U-Bake crust.

You can bake this easy, delicious pie at home if you have fresh blueberries and a Grand Central U-Bake crust.

Seriously? The best pie? Well, yeah. We proclaim this the BEST blueberry pie for a couple of reasons:

You can make it in the blink of an eye.

It tastes like fresh blueberries, and requires only a short bit of baking.

It’s a wonderful way to use our all-butter U-Bake Pie Shell.

And it has only a few ingredients:

 

2 pints ripe blueberries – use the best ones you can find.

3 tablespoons cornstarch mixed with a splash of water, to thicken berry mixture.

Sugar

Fresh lemon juice or, if you’re feeling fancy, berry liqueur

A pinch of salt – we also like to add a pinch of cinnamon, but it’s not necessary.

1 Grand Central U-bake Pie Shell

Sweetened whipped cream or vanilla ice cream (optional)

Step 1: Pre-bake (blind bake) the pie shell. Do this in the morning while it’s cool.

Step 2: Wash the berries. Divide them into two bowls.

Step 3: Combine half the berries with sugar in a saucepan over medium heat. Stir until juicy and bubbling. Add cornstarch-water mixture and continue stirring over medium-low heat until mixture is thick and shiny. This could take as little as three minutes or as long as seven or eight.

Step 4: Remove pan from heat. Add salt and lemon juice. Stir in the fresh berries.

Step 5: Pour berry filling into baked, cooled pie crust. Let it cool for a few hours. The filling will set up nicely.

Serve with sweetened whipped cream or vanilla ice cream, or just eat it all by itself.
