Green Scallion Pancakes

Makes 2 7″ pancakes

1 14-oz ball Grand Central U-Bake Whole Wheat Pizza Dough, thawed

4 tablespoons scallions, chopped
1 teaspoon sesame oil, divided
2 pinches kosher salt

2 tablespoons peanut oil for frying

Prepare the dough
Cut thawed pizza dough in half. Cover the halves with a non-terrycloth tea towel and let rest on the counter for 15-20 minutes.

Roll and fill dough
Using a rolling pin, roll each piece of dough into a rectangle, about 8″ x 4″. Top each rectangle with 2 tablespoons chopped green onion, ½ teaspoon sesame oil and a pinch of kosher salt.

Form dough
With the long side facing you, roll one rectangle into a log being sure to tuck in any loose bits of scallion. Then, take one end of the log and roll dough into a coil. Repeat with the remaining piece of dough. Cover coils with a tea towel and let rest for another 15-20 minutes.

Prepare to fry
Use a rolling pin to flatten each coil into a 7″ pancake. Heat 2 tablespoons peanut oil in a skillet over medium-high heat until the oil shimmers. Add pancakes to hot oil and fry until golden & crisp, about 4 minutes per side. Blot on paper towels, eat and enjoy!
