Makes 2 servings
2 thick slices Grand Central bread (Como or our seasonal Corn Loaf are good choices)
2 ounces softened goat cheese
1 ripe peach, halved and sliced into wedges about ¾ inch thick
1-2 tablespoons honey (we like Bee Local)
Flaky salt, such as Jacobsen’s sea salt
Toast the Grand Central bread. Spread each slice with 1 ounce softened goat cheese. Top with peach slices, drizzle with honey to taste and and sprinkle with flaky salt and chopped fresh basil. Serve immediately.
Variation: Grill the peach slices to soften and caramelize them (see photo below).
