Yeasted Corn Bread Stuffing               Back to Recipe Archive


Ingredients:
1/4 lb. Butter
6 slices Bacon, diced
1 Medium onion chopped
1 lb. Sweet breakfast sausage
1 Medium red bell pepper, cored and diced
2 ribs Celery with leaves, chopped
1/4 cup Chopped parsley
2 Scallions, chopped
8 cups Grand Central Yeasted Corn bread, cubed or crumbled
1 Tbsp. Salt
To taste Pepper, Dash of Tabasco
1 Cup Chicken broth

Procedure:
In a large skillet, sauté the bacon in the butter for 3 minutes. Add the onions and cook for 5 minutes. Add the sausage(crumbled), red pepper and celery and cook the mixture for about 10 minutes. Place the mixture in a large bowl and add the parsley, scallions and bread crumbs. Mix well adding enough chicken broth, spiced with a dash of Tabasco, if desired, to make the mixture adhere. You may drain some of the fat and substitute more chicken broth. Taste for seasoning.
Yield: 10 cups
