Shrimp,
Green Goddess Dressing &
Grand Central Garden Herb Croutons

Lettuce Salad
2 heads butter lettuce (or your favorite salad green)
1-1/2 cups small, cooked Alaskan shrimp
2 cups Grand Central Garden Herb Croutons
¼ cup chopped fresh parsley for garnish
Green Goddess Dressing (recipe below)
Wash
and chill lettuce. Tear into a salad bowl; add Grand Central Garden
Herb croutons and half the shrimp. Toss with desired amount of
Green Goddess dressing. Garnish bowl with remaining shrimp and
parsley. Pass extra dressing. Serves 6.
Green
Goddess Dressing
1-cup mayonnaise
½ cup sour cream
1 whole ripe avocado
2-teaspoons anchovy paste
¼ cup each chopped chives and chopped parsley
1 garlic clove, pressed
1 tablespoon lemon juice
1-tablespoon tarragon vinegar
1-teaspoon sugar
1/4-teaspoon salt
Ground black pepper, to taste
Combine
ingredients in blender or food processor and blend until smooth.
Dressing should be a wonderful green color. (Dressing can be made
ahead and refrigerated.)
