Rustic Apple Walnut Cake

An apple-fest featured recipe. The rustic character of this very moist cake is especially suited to the BIG BASSETTI APPLE!
Big slices of apple and walnut halves give the cake an eye catching appeal.
Preheat oven to 325
Grease and flour on 9x5x4 Loaf pan
2 eggs
½ cup Canola oil or other high quality vegetable oil
2 cups sugar
2 teaspoon baking soda
¾ teas salt
1 teas. cinnamon
1 teas. vanilla
1 cup walnut halves
2 cups unbleached white flour
4 cups tart apples, peeled and thinly sliced
Combine eggs and oil in mixer bowl. Beat to combine. Stir baking soda and cinnamon into sugar and add to egg mixture. Beat well. Stir in vanilla and nuts and then apple slices. Stir in flour last. Mix only enough to incorporate completely.
Spoon into prepared pan. Bake for one hour and 10 minutes. Check for doneness with a toothpick. It may take up to 20 minutes more before the toothpick comes out clean. Cool loaf in pan before unmoulding.
