Middle Eastern Walnut and Pomegranate Spread

This walnut spread is a wonderful introduction to a little known condiment. A thick concentrate of pomegranate juice,
pomegranate molasses has a distinctive tangy flavor and aroma. It is available in Seattle at "Papa John's",
Pacific Food Importers retail hideaway on Sixth Avenue South behind the Immigration Center.
This is a wonderful spread and can be made successfully with the suggested substitutions.
Makes 1 ¼ cups
1 cup walnut pieces
1 red bell pepper, Roasted., peeled and seeded ( may used canned prepared peppers)
¼ cup chopped Italian leaf parsley
1 clove of garlic
1 jalepeno, seeded and chopped
2 Tbls. Olive oil
**1 Tablespoon Pomegranate Molasses
1 teas Ground cumin
1 teas salt
½ teas freshly ground pepper
Preheat oven to 350 degrees. Place the walnuts on a baking sheet and toast until lightly browned, about 10 minutes.
Put the walnuts in the food processor. Cut the flesh into chunks and put in processor with the nuts. Add remaining ingredients and process until a spreadable consistency. (It will not be completely smooth)
Refrigerate and serve chilled or at room temperature as a spread for crostini, flat bread or slices of fresh baguette.
** If unavailable you may substitute 1 teaspoon of honey mixed with a tablespoon of lemon juice.
