Easy Apple Walnut Torte

Years ago a dear friend shared this recipe which I have served
and shared many times over. It is not only delicious, but also
relatively low fat ( if you skip the cream) and amazingly quick
to prepare. The perfect emergency desert!
Preheat oven to 350 degrees
Grease well and flour a 9" tart, pie or quiche pan
2 eggs
1 1/4 cups sugar
1 cup flour
2 teas. baking powder
1/8 teas salt
1/2 teas vanilla or almond
1/2 cup chopped walnuts
1 large apple or 2 small
1 Tbls. lemon juice
additional 4 Tbls. sugar
Peel apple(s), core and slice thinly. Toss with 4 TBLS. sugar
and lemon juice. Set aside. Beat eggs slightly with wire whisk.
Beat in sugar till lemony. Add baking powder and salt to flour
and stir into egg mixture. Add flavorings and stir in nuts.
Spread batter in prepared pan. Press apples into top of batter
in concentric circles. Bake in 350 oven 20-25 minutes. Brush with
melted butter or apricot glaze if desired. Serve warm or at room
temperature with sweetened whipped cream.
