Crostini with Cannelini Beans  Back to Recipe Archive
This recipe couldn't be simpler - or more satisfying. Whether accompanying a bowl of vegetable soup or a glass of something bubbly, these tasty toasts make you happy it's winter.

2 tablespoons olive oil
1 small onion, minced
1 clove garlic, minced
2 small fresh plum tomatoes, peeled, cored and seeded
1 - 15oz can cannellini beans, drained and rinsed
1/8 tsp crush red pepper
Salt and pepper to taste
1 recipe crostini

Heat olive oil in large skillet over medium high heat. Add onion and cook, stirring until softened. Add garlic and cook for 1 minute longer. Coarsely chop tomatoes and stir into onion mixture, along with beans and red pepper. Simmer for 5-7 minutes until tomatoes have softened and beans are warmed through. Mash the beans with a wooden spoon, leaving some beans intact. Season with salt and pepper. Cool to room temperature and serve with crostini toasts.

Serves 8-10 as appetizers
