Basic Brushetta  Back to Recipe Archive

Brushetta is a thick slice of grilled bread, usually rubbed with garlic, drizzled with olive oil, and sprinkled with coarse salt. Served with a variety of toppings, bruschetta makes a terrific light lunch or first course.

Ingredients:
1 loaf crusty white bread (we like our Como, Sourdough or Potato Loaf), sliced thickly ¾-1"
1/3 cup olive oil
3 clove garlic, halved
1 tsp coarse salt

If using the grill, place the sliced of bread on hot grill and toast until golden brown. If using the broiler, place the slices of bread 6" under broiler on sheet pan and lightly brown each side. While the bread is still warm, rub cut half of garlic vigorously across bread and then drizzle or brush with olive oil. Sprinkle with salt.

(If cooking for a large crowd, feel free to press the garlic directly into your olive oil to avoid the extra step. Or allow your guests to complete the process while you set piles of grilled bread on the table.)
