Grand Central Baking Company

Specialties: Rustic breads, hand-formed in the style of European and Mediterranean country breads and baked in a hearth-style oven. Grand Central Bakery also makes pastries and other menu items from scratch and offers catering services.

  • Grand Central bakes and sells approximately 8000 – 11,000 loaves of bread a day.
  • Up to 480 loaves baked at a time in the bakery’s "Bongard" hearth ovens.
  • The mixing bowls at Grand Central Bakery hold 425 pounds of dough each.
  • Between 5 – 7 bakers touch each loaf as it is produced, making the breads truly a product of artisan hands.
  • The Seattle Wholesale bakery and Hawthorne Bakery in Portland boast bulk flour silos which hold 32,000 pounds of flour. In Seattle, the silo is filled, on average, every five days.

Locations: Each Grand Central retail location has a unique design and atmosphere featuring a core of GCB bread and pastry products as well as a menu personalized by the managers, chefs and bakers at the location.
